Soil
Clay and stones. Soil from the Têt valley ancient terraces (quaternary) made of pebbles, red clay and gneiss
Grapes

80% Syrah, 20% Grenache noir, 35 years old vineyards.

Harvest
2010 vintage, 100% hand picked, in september • Yielding 20 hls/ha. • Certified AB by Ecocert sas FR.01.

Vinification
Grapes de-stemmed and crushed • fermentation at controlled temperatures 20-25°C • long maceration (20 days) with pumping over and punching depending on the evolution of extraction • malolactic fermentation • Alc : 13,5°

Maturing
Wine matured in vat during 6 months • SO2 total: 52 mg/l, free: 11 mg/l • Bottling may 2013.

Tasting
Very expressive wine ripe red fruits flavors, with hints of spice. Tanins are softly present. Serve with meat, fresh vegetables and country-style food.

Production
Around 9 000 bottles.

Packaging
Bourgogne of 750 ml. Horizontal box 2x3 • Natural oak cork.

 

 

 

      

T ê t  B l a n c   -  white wine - millésime 2012

Soil
The shallow soils are very stony (pebbles, yellow clay, gneiss, quartz and schist).

Grape varieties
50% white Carignan, 25% grey and pink Carignan, 25% white Grenache, 45 to 65 years old vineyards.

Culture

Short cane pruning (one bud), disbudding, grapes selection, clustering, and thinning of the leaves.

Harvest
2010 vintage. 100% hand-picked, mid-september, in small boxes, looking for moderate maturity for the combined three grapes • Yielding 20 hls/ha. Certified AB by Ecocert sas FR.01.

Vinification
Slow pressing of grapes with stems • Must settled and racked. Low temperature fermentation (15°) in 300 litres barrel • No malolactic fermentation • Alc : 13,5°

Maturing
12 months on lees with occasional stirring • Three years old french oak barrel • SO2 total: 66mg/l , free: 06mg/l  • Bottled sept 2013.

Tasting

Attractive golden robe. Powerful toasty aromas • Full bodied and expressive. Fleshy and supple wine with white stone fruits notes, well balanced by mineral and long finish • to enjoy at 10-12°

Production
around 900 bottles.

50% Shiraz, 50% Carignan, 45 to 65 years old vineyards

Culture

Short pruning (one bud), disbudding, and light green pruning.

Harvest
2009 vintage, 100% hand-picked, mid-september with optimum maturity • Yelding 20 hls/ha • Certified AB by Ecocert sas FR.01.

Vinification
Destemmed and crushed grapes • controlled low temperature fermentation at 20-25°C • maceration of 23 to 30 days depending on the evolution of flavour’s and tannins’ extraction (different for each grape variety) • malolactic fermentation in barrel and vat • Alc : 13,8°

Maturing
2 to 3 years old French oak of 500 litres (demi-muid) • SO2 total: 49 mg/l, free: 09 mg/l • Bottled June 2013.

Tasting
Deep scarlet colour, expressive aromas on red fruits and sweet spices • Silky tannins, both concentrated and refined. This wine can age thanks to the tannins, but the fresh fruits notes are engaging to drink early.
Taste of fruits, spices and white pepper and rosemary. This wine is characterised by its fullness, generosity and velvety texture. To serve at 15°.

Production
Around 4.000 bottles (2009) and 200 magnum (2007).

Bourgogne of 750ml in horizontal boxes 2x3 • Magnum (Bordeau) of 1500ml, 3 per box • Natural oak cork.
