Soil
Clay and stones. Soil from the Têt valley ancient terraces (quaternary) made of pebbles, schist, quartz, gneiss, yellow and red clay.

Grapes
75% Mourvèdre, 10% Grenache, 15 to 45 years old vineyards

Culture

Careful selection of plots. Short cane pruning (one bud), disbudding, grapes selection, clustering, and thinning of the leaves.

Harvest
2009 vintage, 100% hand-picked, mid-september, in boxes, with an optimal ripeness • Yelding: 15 hls/ha • Certified AB by Ecocert sas FR.01.

Vinification
Grapes de-stemmed and crushed • fermentation at controlled temperatures 20-25°C • maceration of 23 to 30 days depending on the evolution of aromas extraction and tannins (different for every grape) • malolactic fermentation in barrel • Alc : 13,8°

Maturing
Maturing in 300 litres 3 years old French oak barrels • SO2 total: 57 mg/l, free : 13 mg/l • Bottled  in sept 2011.

Tasting
Garnat colour, ripe black berries aromas evolving to liquorice hints. • Rich and deep wine, well balanced and structured by maturity and vivacity. Soft silky tannins, concentration and finesse in the mouth. Taste of fruits and spices ending with eucalyptus and a long persisting finish. To enjoy at 15°c.

Production
about 2.000 bottles and 200 magnum.

Bourgogne of 750ml in horizontal boxes 2x3 • Magnum (Bordeaux) of 1500ml in box 1x3 • Natural oak cork.
